Balance on a Friday night

Best SuperValu purchase ever.

Keeping it real in Callan.

Kale + couscous + Ben and Jerry + Bridesmaids movie = Happy Friday night.

Kale and Couscous 


2 C chopped Kale

1/4 C raisins

1 can garbanzo beans

1 onion chopped

2 cloves of garlic

2 T olive oil

1/4 C Balsamic vinegar

1/2 C broth

3 T cream

Herbs of your choice–I used oregano and basil

Salt and pepper to taste

Cook couscous according to package directions—it’s really great if you use hot broth or bouillon instead of water.

Combine raisins, garbanzo beans Balsamic vinegar and 1/2 C broth in a small saucepan, bring to a simmer.

In a skillet heat oil and saute onions and garlic.  When onions become translucent add kale and continue to saute, cover and let steam for a minute or two.   Pour raisin mixture into skillet, lower heat and add cream.

Top couscous with kale mixture and enjoy!
