Waffle Wednesday

There was lots of laughter, delicious toppings, nutella abounding and great conversation.  It all happened so fast there are no pics.  Don’t worry there will be a next time. :]

Nana’s waffles
1 cup all-purpose flour   (I use whole wheat)
1 tablespoon ground flax seed
1 tablesoppn rolled oats
1/2 teaspoon salt
1/4 teaspoon baking soda
1 egg. separated
7/8 cup buttermilk
2 tablespoons oil
2 tsp cinnamon
1.  Heat waffle iron. Whisk dry ingredients together in a medium bowl.  Wisk yolk and buttermilk and butter.
2.  Beat egg white until it just holds a 2-inch peak.  (they’ve got to be kidding) (nana note).
3.  Add liquid ingredients to dry ingredients in a thin steady stream while mixing gently with a rubber spatula. Gently fold egg white into batter
4.  Spread appropriate amount of batter onto waffle iron.  Cook waffle until golden brown.  2 to 5 minutes You can keep waffle warm on a wire rack in a 200 degree oven for up to 5 minutes.
This doubles makes 11 squares, you may have to experiment with your waffle maker depending on its size to know how much it will make for you.
almost as good as butter milk waffles.
If you are out of buttermilk.  Make your own baking powder using baking soda and cream of tartar and cutting back on the quanity of milk
Follow recipe for Best Buttermilk Waffles, adding 1/2 teaspoon cream of tartar to the dry ingredients and substituting a scant 3/4 cup milk for the buttermilk. 
*****Or just use the less milk and no cream of tartar 🙂  It is really forgiving.
