Life is Sweet: The Weekly Biscuit and bread for good measure

While life here has its challenges there is much to be thankful for, to laugh about and millions of reasons to be blissful.  We saw Mamma Mia last night in Dublin and this got me thinking of my own momma and this led to bread baking and snickerdoodles.   A delicious train of thought.  In other news all my talk at dinner about planning a rat theme party ended with us spotting a HUGE rat outside one of the chalets.  Think size of a cat, I thought it was a brown oppossum, or hedgehog or porcupine or anything but a rat.  But no, big long tail and pointy nose= rat.  After we get over the shock and horror of it all you may find a red velvet rat cake here…  :]

3 3/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cream of tartar
1 C butter or margarine
2 C sugar
2 eggs
1/4 C milk
1 tsp vanilla
3 T sugar
1 tsp ground cinnamon

Grease a cookie sheet.  Stir together flour, sofa, cream of tartar,
and 1/2 tsp. salt.  Beat butter for 30 seconds; add the 2 cups sugar
and beat till fluffy.  Add eggs, milk and vanilla; beat well.  Add dry
ingredients to beated mixture beating till well combined.  Form dough
into 1 inch balls; roll in a mixture of the 3 T sugar and cinnamon.
Place balls 2 inches apart on a cookie sheet; flatten slightly with
the bottom of a drinking glass.  Bake in a 375 degree oven about 8
minutes or till light golden makes about 66 🙂
